White Chocolate Peppermint Kiss CookiesHave you started your holiday baking yet? All I feel like doing now that it’s December, is baking cookies and watching Christmas movies all day! Anyone with me? If you have young children like me, than you may be watching more Christmas cartoons than movies.  Our favorites hands down are “A Charlie Brown Christmas” and “How the Grinch Stole Christmas”.  I love these classics, and the uplifting messages that they teach my children!White Chocolate Peppermint Kiss CookiesWe are trying this year to help our oldest (three) to understand the true meaning of Christmas, instead of getting caught up in all of the worldly holiday festivities. Don’t get me wrong, I love all of the fun holiday traditions, however I think it’s important to also teach my kids why we celebrate Christmas. That it is a celebration of the birth of Jesus Christ, and that the true spirit of Christmas should be about generosity and showing love to those around us.
In an effort to teach our son about the true spirit of Christmas, we decided to give a gift this year to Jesus. We found a charity online and let him pick out a topic that he wanted to donate to. He was so concerned about the children that he saw in the pictures, and really wanted to help them. After much deliberation, he ended up deciding to choose to give medicine to some children in central America, and even helped pay for it by bringing us some money from his piggy bank.  It was wonderful to see how excited he was about helping the children that the donation was going to, and the joy that it brought him knowing how much his gift would help those children.White Chocolate Peppermint Kiss CookiesSo… I may have gotten a little off topic, but if you’re searching for the best Christmas cookie recipe to make this year for your holiday baking, I have you covered. These White Chocolate Peppermint Kiss Cookies are so delicious and refreshing! Super soft and chewy in the center with yummy pockets of melted Hershey’s Candy Cane Kisses. Yes, these cookies are magical.
White Chocolate Peppermint Kiss CookiesDo you know what the best part is? They are insanely easy to make! These White Chocolate Peppermint Kiss Cookies are made in just one bowl, use six ingredients, and take less than 15 minutes from start to finish.
Let that sink in for just a minute.
Yep. You heard me right. Fifteen minutes total. True story. You can thank me later.
These are the perfect cookies to make for a quick and easy holiday treat! Whether it’s a last minute Christmas cookie exchange, or just a fun treat for your kiddos when they get home from school – I promise everyone will LOVE them!

White Chocolate Peppermint Kiss CookiesTips for Making White Chocolate Peppermint Kiss Cookies

  • If you’re not a huge peppermint fan just scale back or omit the peppermint extract. However these are still peppermint cookies, so you should hopefully be a peppermint fan if you are making them.
  • I use sheet pans like these for baking all of my cookies.
  • Line the sheet pans with silicone baking mats like these or parchment paper to prevent the cookies from sticking to the pan.
  • Use a cookie scoop to scoop the dough into evenly onto the pans to achieve similarly sized cookies.
  • Press a few of the larger left over Hershey’s Candy Cane chunks (chopped up) into the tops of the cookies before baking so you can see the festive red stripes.
  • For some crunch, consider adding macadamia nuts. They work wonderfully in these cookies!
  • Do NOT over bake these cookies. They are wonderfully soft and chewy if you take them out of the oven when they don’t look completely cooked (about 8 minutes). Just let them continue to cook (out of the oven) on the sheet pan for a minute or two, and then remove to a wire rack to finish cooling.

These quick and easy White Chocolate Peppermint Kiss Cookies are perfectly soft, chewy and delicious! Simple to make with only six ingredients, you’ll have these cookies made and out of the oven in less than 15 minutes – perfect for a quick holiday treat!

Ingredients

Scale
  • 1 super moist white cake mix
  • 1/3 cup oil
  • 1/4 cup light brown sugar, packed
  • 2 eggs
  • 1/8 teaspoon Adams Peppermint Extract
  • 1 cup Hershey’s Candy Cane Kisses, chopped

Instructions

  1. Preheat the oven to 375 degrees fahrenheit.
  2. Line a baking sheet with a silicone mat (I love Silpat!) or parchment paper.
  3. Add dry cake mix, brown sugar, oil, eggs, and peppermint extract to a medium bowl.
  4. Mix well until all ingredients are incorporated.
  5. Roughly chop the candy cane kisses (you can also use a food processor to chop them).
  6. Add most of the chopped kisses to the bowl (leaving some of the larger chunks to the side) and mix briefly to incorporate.
  7. Using a cookie scoop or a spoon, make 1 1/4 inch balls and space evenly on your cookie sheet.
  8. Press a few of the larger chunks of left over kisses into the tops of the cookies.
  9. Bake for 8-10 minutes, or until the tops are just barely turning golden brown. I usually take mine out closer to 8 minutes.
  10. Let the cookies sit for a minute on the cookie sheet, and then remove them to a wire rack to finish cooling. Store in an airtight container for up to a week, if they last that long!

Notes

*The peppermint extract is very strong, so don’t add too much or it will overpower the cookies. A little goes a long ways!

*I’ve also added chopped macadamia nuts to these cookies and they are wonderful!
