A hearty, healthy and filling greek salad – with the BEST, easy blender dressing!

red leaf lettuce
bell peppers (we like orange, red and/or yellow)
canned black olives
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
3/4 teaspoon onion powder
salt and pepper to taste (about 1/4 teaspoon each)
Wash, chop and prepare all of the salad ingredients.
For the dressing, pour the red wine vinegar and mustard into the blender. Turn on low and slowly add the olive oil to emulsify. Add the rest of the dressing ingredients and blend until smooth, creamy and all the ingredients are incorporated.
Drizzle small amount over salad (start with less and add more if desired)
Store extra dressing in airtight container in the fridge.
