A hearty, healthy and filling greek salad – with the BEST, easy blender dressing!
I’m a girl who loves good mediterranean food: Kofta, Tabbouleh, Baklava, Lamb Gyro’s slathered in fresh, creamy Tzatziki sauce. How about a YES MA’AM on that one. But the king of all Mediterranean food in my opinion is a stellar Greek salad. This may be because I’m a sucker for salads in general. However after searching and searching for the PERFECT combination of ingredients & dressing, I can say with full confidence that this Greek salad will be hard to beat! I mean, with cool crisp cucumbers, juicy ripe tomatoes, spicy sliced red onion, tangy Kalamta olives and crumbly feta on a bed of fresh romaine, what could go wrong?
The real star of the show is the dressing. It’s fresh, light and packed full of flavor with the perfect amount of tang and spice. My favorite part: it’s made in a blender. Pause for effect. Yes, I am in love with my blender. I could probably write a whole book about why I love my blender. Blender pancakes, raw cheesecakes, dairy free alfredo sauce, and pretty much any salad dressing I ever make… it’s like a part of my family. Probably in the top 5 things I would grab if my house were on fire, along with my 3 children and husband (I won’t tell you in which order). This dressing is so flavorlicious y’all that a little goes a LONG way – which is great in my book calorie wise. So make sure to not drench your salad or you will be thinking: “What the heck is this lady talking about?? This stuff is gross!” Also, key to the dressing is making sure to add the oil last, slowly so that it has a chance to emulsify with the vinegar. This will create a fresh, creamy dressing with the perfect amount of tang that will soon become your best friend.
Another reason to make this dressing is that it is amazingly versatile. You can marinate chicken or any meat in it, use it for a vegetable dip, drizzle it on wraps or even pasta. In fact, a greek pasta salad with this dressing is sounding pretty good right about now… I know what I’m making for dinner tonight!

Ingredients
Salad
- romaine lettuce
- red leaf lettuce
- cherry tomatoes
- cucumbers
- red onion
- bell peppers (we like orange, red and/or yellow)
- canned black olives
- kalamata olives
- feta cheese
- chicken (optional)
Dressing
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 3/4 teaspoon onion powder
- salt and pepper to taste (about 1/4 teaspoon each)
Instructions
- Wash, chop and prepare all of the salad ingredients.
- For the dressing, pour the red wine vinegar and mustard into the blender. Turn on low and slowly add the olive oil to emulsify. Add the rest of the dressing ingredients and blend until smooth, creamy and all the ingredients are incorporated.
- Drizzle small amount over salad (start with less and add more if desired)
- Store extra dressing in airtight container in the fridge.
