These easy Salted Brown Butter Rice Krispie treats have that salty-sweet, nutty brown butter flavor, with pockets of gooey marshmallow that make them out-of-this-world amazing!
Hands down, these are the BEST Rice Krispie treats I’ve ever tasted. They are definitely not your back-of-the-box, plain ole’ treats. They are so much more. Ooey and gooey, these treats are perfection that you can’t resist!
Many of you may have heard about or tried Smitten Kitchen’s Salted Brown Butter Rice Krispies. I remember when I first tried them a few years ago and they were so good I’ve never gone back. Well this is my take on them, and I have to say I didn’t think they could be beat. Boy was I wrong! I used salted butter and changed up the ratios of marshmellows to rice krispies for some extra gooeyness. I also add a few cups of marshmellows at the end, stirring just until they were partially melted to create delicious pockets of goo. The result? Pure bliss.
In our house rice krispie treats reign supreme. They are my number one go to for a quick treat, and the kids love to make them with me because they are so easy and practically foolproof. Rice Krispie Treats are one of those fun snacks because they are so versatile and can be dressed up and decorated to match any season, holiday or party!
Tip for the Perfect Rice Krispie Treats:
One great tip for achieving the perfect rice krispie treats, is to not press to hard and crush the cereal when patting them into the pan. If you compact them too much you will end up with dense little bricks, and trust me, that is not what you want. Instead, use a silicone spatula like this one (or you could also use the inside of the leftover butter wrappers) to gently spread and press the rice krispie treats into the pan. You want them to be pressed down well for easy cutting, but not overly compact.
So in a nutshell: salty-sweet + nutty brown butter flavor + pockets of ooey gooey marshmellow = the perfect Rice Krispie Treat.

Ingredients
- 10 cups Rice Krispies (about one 12 oz box)
- Two 10 oz. bags of mini marshmallows (2 cups removed and set aside)
- 1 cup salted butter (2 sticks)
- 1/4 teaspoon course sea salt
Instructions
- Prepare a 9×13-inch pan by greasing it with spray or butter.
- Place all (except 2 cups) of the marshmallows in a large microwave safe bowl. I like to use glass. Place the bowl in the microwave and melt the marshmallows partially for 1 to 2 minutes (not completely melted, just softened). See notes for stovetop option.*
- In a medium saucepan, melt the butter over medium heat. It will melt, then foam, then turn a light golden and then finally start to brown. The process actually happens pretty fast so pay attention and stir frequently to prevent burning, especially towards the end.
- When the butter starts to darken in color and you smell a nutty aroma, remove from heat and pour on top of the partially melted marshmallows.
- Stir the marshmallows and browned butter together (the butter will melt them the rest of the way). Continue to stir until the butter is incorporated and you have nice and smooth, melted marshmallows with flecks of the browned butter. Yum!
- Add the Rice Krispies and course sea salt and stir till combined well.
- Stir in the reserved two cups of marshmallows until they are partially melted to create delicious pockets of goo.
- Gently press into prepared pan using a silicone spatula or the leftover butter wrappers.
- Let cool for an hour (if you can wait) before slicing. Enjoy!
Notes
**Stovetop option: If you prefer you can melt the butter in a large pot on the stovetop and then add the marshmellows directly to the pot and stir to melt.** I like to use the large bowl/microwave because I feel like it’s easier to stir the Rice Krispies in at the end.
