These healthy Paleo Pumpkin Chocolate Chip Cookies are the perfect fall treat! They are so easy to make, use just one bowl and only 10 ingredients!

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium mixing bowl, combine all wet ingredients and stir.
  3. Add the dry ingredients to the bowl and mix until the wet and dry ingredients are combined.
  4. Add in the chocolate chips if desired.
  5. Spoon onto a parchment lined baking sheet.
  6. Cook for 18-20 minutes.
  7. Cool completely on a wire rack. The texture is best after completely cooled!

Notes

*I like to use Enjoy Life mini dark chocolate chips if I’m just going for gluten and dairy free. If I want refined sugar free or Paleo, I love using Lily’s dark chocolate chips (vegan and sugar free).
