These healthy Paleo Pumpkin Chocolate Chip Cookies are the perfect fall treat! They are so easy to make, use just one bowl and only 10 ingredients!
As soon as the fall season hits, all regular chocolate chip cookies in our house transform into these delicious soft and chewy pumpkin spiced chocolate chip cookies. And let me tell you – they are sure to make your autumn tastebuds sing!
Healthy Paleo Pumpkin Cookies
These Paleo Pumpkin Chocolate Chip Cookies are full of all the good stuff, so you can eat them guilt-free! Well, mostly…wink wink. They are paleo, gluten-free, dairy-free, and refined sugar-free, using healthy substitutes like almond flour, coconut yogurt, and maple syrup. Lot’s of flavor, less calories and more nutrition!
Plus the best part is that they are extremely easy to whip up, use one bowl, and just ten ingredients!
Now that’s my kind of cookie.
How to Make Paleo Pumpkin Chocolate Chip Cookies
Now these cookies really are a breeze to make. They use simple ingredients that most families who cook paleo already have in their kitchen, and if you don’t really the only unique ingredients you may need are almond flour, coconut yogurt, pure maple syrup and paleo friendly chocolate chips (optional).
Again, they are made in just one bowl with a spoon. High five! My kids love recipes like this because they can easily help measure right into the bowl and they LOVE using a spoon to stir them up (instead of our electric mixer).
You simply add following the wet ingredients to a bowl:
- coconut yogurt
- pumpkin puree
- maple syrup
- vanilla
- egg
Stir till combined. Then add the following dry ingredients to the same bowl:
- almond flour
- baking soda
- pumpkin pie spice
- cinnamon
- salt
Stir till the dry and wet ingredients are combined. Add in your favorite chocolate chips (if desired) and bake in the oven for 18-20 minutes. Done! Super-duper easy huh?
Tip: I like to use Enjoy Life for a vegan option, or Lily’s dark chocolate chips (vegan and sugar-free) if I’m going for completely Paleo friendly!
