A classic Thai dessert made simple, this Easy Mango Sticky Rice is creamy, refreshing and will transport you right to the tropics!
I was craving something sweet today (story of my life) and we had some fresh mangos sitting out on the counter. Now mangos are MEGA delicious just plain, however today I thought I would indulge my sweet tooth by making one of my favorite desserts – Mango Sticky Rice!
Thai Mango Sticky Rice (Khao Niaow Ma Muang in Thai) is a popular dish in the Indochina region of Southeast Asia, in countries such as Thailand, Laos, Cambodia, and Vietnam. This dessert is traditionally made with glutinous rice that is steamed in a muslin cloth over the stove, and then topped with a sauce made of coconut milk and palm sugar. However, I’m lazy and didn’t want to search the stores for glutinous rice or have to steam it over the stove (THANK YOU RICE COOKER!!!) Plus, I wanted something NOW to satisfy my sweet cravings. Yes I know I sound like a five year old. So I used jasmine rice…and it was fantastic!
Super easy to make, this recipe only has four ingredients! It’s the perfect dessert to whip up quickly when you want something sweet. The combination of refreshing, sweet and tangy mangos paired with the creamy, silky perfection of the coconut rice is spot on.
You can easily make this dish refined sugar-free by substituting agave for the sugar like I did with the picture above (or another sweetener replacement of choice, such as coconut sugar, maple syrup, stevia, etc.) Make sure to taste as you are adding the agave. I usually add a little less than the white sugar calls for. Also, it may change the color of your rice to brown (see picture above), making it look like you used brown instead of white rice. Normally that would not be a bad thing (I’m a huge fan of brown over white rice for health reasons) however this dish is the exception. Make SURE you use white, because the brown will not stick together as well as the white jasmine rice. Glutinous rice is even stickier than jasmine rice and if you have the time go for it, however I loved the simplicity of throwing my rice in the rice cooker and walking away for thirty minutes instead of standing over the stove.
Serve this refreshing dessert after some spicy Pad Thai or Green Curry and I promise, it won’t disappoint!

Ingredients
- 1 cup uncooked jasmine rice
- 1 can coconut milk, full fat
- 1/2 cup sugar or agave*
- 1/2 teaspoon vanilla extract
- pinch of salt
- 1 Mango sliced or cubed
- toasted sesame seeds (optional)
Instructions
- Cook rice according to directions on package.
- In a medium saucepan warm the coconut milk over medium heat
- Add sugar or agave and stir until dissolved/incorporated
- Bring to a low boil, then remove from heat.
- Add 3/4 of the sauce to the cooked rice and mix well.
- Refrigerate until chilled, then serve with mangos and additional sauce if desired.
Notes
- Add more or less sugar to taste depending on how sweet you would like your sauce to be.
- Optional variation: you can also add 1/4 teaspoon of cardamom to the sauce
