Ingredients

Scale

Chili

  • 2 tablespoons extra virgin olive oil
  • 2 medium sweet or yellow onions diced
  • 1 large jalapeno pepper, seeded and diced
  • 7 oz canned green chilis (don’t drain)
  • 5 cloves garlic, peeled and finely minced
  • 4-6 cups of chicken broth (depending on how thick you like your soup)
  • 3-4 cups shredded chicken (I use about 1 small/medium rotisserie chicken)
  • two 15 oz. cans of cannellini beans, drained and rinsed (reserve 1 cup for blending * see directions)
  • one 15 oz. can great white northern beans
  • 1 tablespoon lime juice
  • 1 and 1/2 tablespoons cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon salt (to taste)
  • 1 teaspoon black pepper (to taste)
  • 1/4 teaspoon cayenne pepper (optional, to taste)
  • two pinches of red chili flakes (optional, to taste)
  • 1/3 cup fresh cilantro leaves, finely minced

Optional Toppings

  • tortilla strips or chips
  • diced avocado
  • plain greek yogurt
  • shredded Monterey Jack cheese
  • chopped cilantro
  • lime

Instructions

  1. Heat olive oil in a saucepan over medium high heat. Saute the diced the onions and jalapenos for a minute and then add the chopped garlic.
  2. Continue to cook until the onions turn translucent and soft. Add the canned diced green chilis and cook for another minute. Add the onion mixture to the slow cooker and set aside.
  3. Drain and rinse the beans. Set aside 1 cup of the rinsed cannellini beans.
  4. In a blender puree the cup of cannellini beans with some chicken broth (just enough to cover the beans). Less is more, you can slowly add more chicken broth if needed. You want this to decently thick because it’s going to thicken/make your chili creamy.
  5. Shred rotisserie chicken or whatever chicken you are using.
  6. Add all of the rest of the chili ingredients except cilantro and lime juice to the crockpot (not toppings). Turn on low and cook for 6-8 hours.
  7. Stir in the cilantro and lime juice.
  8. Top with your favorite toppings and serve warm.
