Ladies and gentlemen, prepare to have your mouth hugged. You are going to want to snuggle up with a bowl of this soup and never let go. Not for anything. Can I just tell you how delicious this White Chicken Chili is? Warm, rich creamy broth that is completely dairy-free – sounds almost too good to be true! I love how hearty and thick this soup is, and it has the perfect spicy zing yet your children will still be gulping it down by the spoonful.
Super easy with minimal prep, this Crock Pot White Chicken Chili is the perfect weeknight meal. The key – rotisserie chicken. While you can use any chicken you like, I LOVE grabbing a rotisserie chicken from Costco, shredding it up and dumping it in with the rest of the ingredients. Saves tons of time and adds great flavor too!
Here’s how this Crock Pot White Chicken Chili magic happens.
First: prep the veggies by dicing the onion and jalepeno. Yes, this is my least favorite part of the recipe but trust me – it’s worth it.
Second: Saute the onion, jalepeno and garlic in the olive oil until the onion are soft and translucent. Add the canned green chilis, cook for another minute to infuse flavor, and then move the mixture to the crockpot.
Next: Drain and rinse all of the beans, keeping one can of the drained and rinsed cannellini beans separate from the rest.
Then: Busting out the blender, puree that one can of cannellini beans with some chicken broth until smooth. Start with less broth and add more if needed; mixture should be thick.
Lastly: Shred rotisserie chicken and dump all of the ingredients into the Crock Pot, turn it on, and let it work it’s magic.

Crockpot White Chicken Chili

Ingredients
Chili
- 2 tablespoons extra virgin olive oil
- 2 medium sweet or yellow onions diced
- 1 large jalapeno pepper, seeded and diced
- 7 oz canned green chilis (don’t drain)
- 5 cloves garlic, peeled and finely minced
- 4–6 cups of chicken broth (depending on how thick you like your soup)
- 3–4 cups shredded chicken (I use about 1 small/medium rotisserie chicken)
- two 15 oz. cans of cannellini beans, drained and rinsed (reserve 1 cup for blending * see directions)
- one 15 oz. can great white northern beans
- 1 tablespoon lime juice
- 1 and 1/2 tablespoons cumin
- 2 teaspoons dried oregano
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
- 1/4 teaspoon cayenne pepper (optional, to taste)
- two pinches of red chili flakes (optional, to taste)
- 1/3 cup fresh cilantro leaves, finely minced
Optional Toppings
- tortilla strips or chips
- diced avocado
- plain greek yogurt
- shredded Monterey Jack cheese
- chopped cilantro
- lime
Instructions
- Heat olive oil in a saucepan over medium high heat. Saute the diced the onions and jalapenos for a minute and then add the chopped garlic.
- Continue to cook until the onions turn translucent and soft. Add the canned diced green chilis and cook for another minute. Add the onion mixture to the slow cooker and set aside.
- Drain and rinse the beans. Set aside 1 cup of the rinsed cannellini beans.
- In a blender puree the cup of cannellini beans with some chicken broth (just enough to cover the beans). Less is more, you can slowly add more chicken broth if needed. You want this to decently thick because it’s going to thicken/make your chili creamy.
- Shred rotisserie chicken or whatever chicken you are using.
- Add all of the rest of the chili ingredients except cilantro and lime juice to the crockpot (not toppings). Turn on low and cook for 6-8 hours.
- Stir in the cilantro and lime juice.
- Top with your favorite toppings and serve warm.

How many people does this feed?
I would say it’s about 10 adult servings, give or take. It usually feeds my family of 5 (three of which are kids) for two nights with some leftovers for lunches.
