This completely addicting Cowboy Caviar (also know as Texas Caviar) is loaded with veggies, black beans, black-eyed peas and a secret ingredient, then tossed in a light vinaigrette-style dressing – perfect served with your favorite chips at your next party or summer BBQ!

1 can corn, drained
1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1 large can sliced black olives
1 bell pepper, diced (I like to use half red, half orange)
1/2 red onion, diced
3 avocados, cubed
1/2 cup olive oil
1/3 cup fresh lemon juice
4 tablespoons red wine vinegar
2–3 tablespoons chopped fresh cilantro
1 1/2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Chop and prepare all veggies.
Add all salsa ingredients to a large bowl.
In a small bowl whisk together the dressing ingredients.
Pour dressing over salsa ingredients and tossed to combine.
