This completely addicting Cowboy Caviar (also know as Texas Caviar) is loaded with veggies, black beans, black-eyed peas and a secret ingredient, then tossed in a light vinaigrette-style dressing – perfect served with your favorite chips at your next party or summer BBQ!
Guys. This salsa is my jam. Seriously, it’s my go-to side dish for any picnic, potluck, party or BBQ. When I make it for my family I have to lock myself in a closet to eat it or there won’t be any left. It’s DELISH!!! This is not your every day salsa my friends. It’s loaded with avocado, corn, black beans, black-eyed peas, fresh cilantro and a secret ingredient! I love how fresh and filling this hearty salsa is. Honestly I could eat it by itself with a spoon for dinner (and may have…don’t judge).
I tried Cowboy Caviar for the first time when we lived in Houston a few years back while the hubs was in medical school. I was instantly hooked. Over the years I’ve tried and made many versions of this dip and at last have come up with one that tops them all. I love all of the textures and flavors in this yummy version of Cowboy Caviar. It has the perfect zesty zing to it from the lemon juice in the light vinaigrette-style dressing.
Bonus points: it’s super easy and can be thrown together in under 15 minutes!Also, it’s easily customizable and you can make it exactly how you like. Not a fan of onions? No prob, just cut down on them, leave them out, or replace with a little onion powder instead. Same goes for the rest of the ingredients. Super easy to remove or substitute your favorite veggies! Although – I do have to say, this combo is pretty spectacular as is.
And that secret ingredient I was talking about? It’s BLACK OLIVES. Throwing in a can of sliced black olives really elevates this dish to a new level. I know I know. Some of you are thinking “what the heck?? Olives aren’t in Cowboy Caviar?!” What can I say; I’m a rule breaker.
TIPS:
- For the corn, you can use fresh or canned. I usually grab canned for convienience but the times I’ve used fresh roasted corn it has added an extra layer of flavor that knocks this salsa out of the park!
- I’ve added cherry tomatoes to this as well and it’s Mmm.mmm good!
- This salsa lasts great for 2-3 days in the fridge. The avocado’s do start to brown a little, so if you don’t like that, or want it to last longer (up to a week) just leave the avocado out and then add them to a portion of the dip right before serving. This way your leftovers don’t have avocado in them and you can add it again the next time you serve. Disclaimer: this salsa doesn’t typically make it past 2 days at our house, so I’ve never bothered with this step.

Ingredients
Salsa
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can black eyed peas, drained and rinsed
- 1 large can sliced black olives
- 1 bell pepper, diced (I like to use half red, half orange)
- 1/2 red onion, diced
- 3 avocados, cubed
Dressing
- 1/2 cup olive oil
- 1/3 cup fresh lemon juice
- 4 tablespoons red wine vinegar
- 2–3 tablespoons chopped fresh cilantro
- 1 1/2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Chop and prepare all veggies.
- Add all salsa ingredients to a large bowl.
- In a small bowl whisk together the dressing ingredients.
- Pour dressing over salsa ingredients and tossed to combine.
