There is nothing that I love more than a salad that not only tastes amazing, but also fills me up – and this salad is just that! It’s complete with mixed greens, rotisserie chicken, crumbled goat cheese, blackberries, mangos, toasted shredded coconut and slivered almonds. Yesssss MA’AM.
This is one of those salads that tastes so amazing that you crave it and dream about making it again. Until you do. Every. Day. Okay, maybe not everyday, but I promise this will become one of your favorite spring and summer salads that you look forward to every year!
This Blackberry Mango Chicken Salad
The toasted coconut and slivered almonds in this Blackberry Mango Chicken Salad add a wonderful textural element, and the creamy goat cheese crumbled on top is absolutely devine. If you aren’t a fan of goat cheese though, you could easily substitute feta. I personally love the goat cheese because it has a wonderful creamy texture that pairs so well with all of the flavors and textures in this salad!
One of my favorite time savers for convenience and speed is to use a rotisserie chicken in this recipe. I usually purchase mine at Costco, shred them and then divide up the shredded chicken between a few small freezer bags for quick and convenient weeknight dinners or easy lunches. It makes the salad take less than 10 minutes to throw together, and really adds wonderful flavor!
Cinnamon Maple Balsamic Vinaigrette
The crowning feature of this salad that ties all of the flavors together in absolute perfection, is the Cinnamon Maple Balsamic Vinaigrette. It’s completely dairy free, deliciously creamy, and perfectly balanced between tangy and sweet from the balsamic vinegar and maple syrup. It’s packed with flavor from the garlic, herbs and cinnamon and my favorite part is that you hardly need to use any because it’s so flavorful, which means less calories!
Oh, and did I mention that this dressing is ridiculously easy to make? It takes less than 5 minutes to whip up in a blender, and only a handful of ingredients! I store it in my fridge for a few weeks, or freeze leftovers if I know I won’t be using it. Then just pull it out and let it thaw on the counter for an hour or two before using again!

Ingredients
- 5–7 cups spring mixed greens, washed
- 2 cups shredded rotisserie chicken
- 2 cups blackberries
- 1 1/2 cups sliced mangos
- 2/3 cup slivered almonds, toasted
- 2/3 cup unsweetened shredded coconut, toasted
- 1/2 cup crumbled goat cheese
- Cinnamon Maple Balsamic Vinaigrette, to taste
Instructions
- Prepare, wash and dry the mixed greens and blackberries.
- Slice the mango in long sliced or cubes.
- Toast the shredded coconut in a small pan on the stove over medium heat for a couple of minutes, stirring frequently, remove from the pan when it starts to turn golden. Repeat with the slivered almonds.
- Assemble the salad with the greens on the bottom, topped with the berries, mango, almonds, coconut and then crumble the goat cheese on top in small to medium size pieces.
- Drizzle the Cinnamon Maple Balsamic Vinaigrette on top to taste.
Notes
*The measurements for the salad are preferential. I usually just assemble the salad per individual serving and top with the desired amount of toppings and dressing to taste.
