To be honest, I’m usually not much of a breakfast person. Most mornings, I grab a protein shake or a hard-boiled egg on my way out the door. But lately, I’ve been obsessed with this Avocado Toast with Sunny Side Eggs.
So. Freaking. Good.

Is Avocado Toast Healthy?
Absolutely! If I could eat this every day for breakfast (or even lunch, for that matter), I’d be a happy girl. I love this Avocado Toast with Sunny Side Eggs because it has the trifecta of keep-you-full nutrients:
1. Whole grains
2. Protein
3. Healthy fats
This meal is seriously the breakfast of champions. It keeps me energized for hours, reduces any snack cravings, and tastes just heavenly! It’s a simple, healthy breakfast or lunch—perfect for when you need something quick and delicious. Plus, it’s packed with protein along with healthy carbs and fats! Now that sounds like a great meal to eat any time of day, don’t you think?
Did you know that seventy-five percent of an average-size avocado is made up of monounsaturated fats? These are the “healthy fats” that can help reduce bad cholesterol levels, lower the risk of heart disease, and help with blood sugar control. Also, avocados are an excellent source of fiber! And if you use whole wheat bread (like I do in this recipe) for your avocado toast, then you’re really packing in the nutrients and fiber!
Now, while this Avocado Toast with Sunny Side Eggs is definitely packed with nutrition, it is by no means low calorie. If you are wolfing down multiple slices of avocado toast every day, you’re consuming a lot of extra calories and fat! The key is moderation (alas, I cannot eat avocado toast three times a day for every meal—because you know I would). But as always, much of it depends on your personal caloric needs and your own diet and wellness goals.
Avocado Toast Toppings
One of my favorite things about avocado toast is how versatile it is. There are so many topping options; the sky is the limit! My all-time favorite combination, though, is definitely this Avocado Toast with Sunny Side Eggs.
Warm whole grain toast topped with creamy avocados, peppery arugula, and fresh sunny-side-up eggs—yes please! And aren’t those free-range eggs just gorgeous? Seriously, they taste AMAZING. Not to mention, they are so pretty and have the brightest yolks I’ve ever seen! Add a side of heirloom tomatoes to your plate tossed in a little olive oil and chopped basil, and it’s pure perfection.
Now, are you ready for the secret ingredient to this recipe? It’s really quite simple: salt and pepper. The key to delicious avocado toast is definitely a generous sprinkle of salt and pepper. It brightens the flavors and ties them all together. Make sure you don’t skip this step!!!
I love shopping at our local Albertsons to pick up all of the ingredients for this recipe. With a store located just minutes from our home, it has become our go-to stop for groceries. They always have the best fresh produce, and I love how friendly their employees are! They help me find exactly what I’m looking for and as a food blogger, I definitely give them a challenge with some of the weird ingredients I use in my cooking (i.e. nutritional yeast, xanthan gum, etc.).
Here are some fun topping ideas for changing up this recipe:
- Sprinkle with crushed red pepper flakes or hot sauce for some heat
- Drizzle with balsamic vinegar for a deep rich flavor
- Mix some cottage cheese into the avocado for some extra protein and creaminess
- Add a squeeze of lemon or lime to your avocado for a refreshing tang
- Sprinkle with some chia seeds for an extra nutrition boost

- Yield: 2 slices of avocado toast 1x
Ingredients
- 2 Happy Egg Co. Free-est of the Free Range Eggs
- 2 slices of whole wheat bread (or gluten-free bread)
- 1 ripe avocado
- 1/2 cup fresh greens (arugula, baby spinach, etc.)
- fine sea salt and freshly ground black pepper (to taste)
- 1/2 cup heirloom cherry tomatoes, sliced into halves
- 5–6 basil leaves, chopped
- 2 teaspoons extra virgin olive oil
Instructions
- Wash the greens (arugula, spinach, etc.) and set aside.
- Toss the cherry tomatoes with 1 teaspoon of the olive oil, chopped basil, and salt to taste.
- Toast your whole wheat bread till just barely golden.
- Take your avocado, slice it in half, and remove the seed. Using a large spoon, scoop out one half and place it on top of one of the slices of toast. Mash it with a fork and spread it over the toast. Repeat with the other half of the avocado on the remaining slice of toast. (You can also mash the avocado in a bowl and then spread it over the toast, it just makes another dish to wash.)
- Place a small handful of greens on top of the mashed avocado and set them on your serving plate with the tomatoes.
- Heat the remaining teaspoon of olive oil in medium nonstick skillet on medium-low heat until slightly simmering.
- Crack the eggs gently into the pan to keep the yolks intact.
- Cook until the tops of the whites are set but the yolks are still runny (about 2-3 minutes). If you prefer your tops cooked a little more, you can add a small spoonful of water to the pan, cover with a lid, and cook another 30 seconds or so. This will help cook the top of the egg (the yellow yolk will be less visible) but the yolk will still be runny inside.
- Using a metal spatula, remove the eggs from the pan and set one on top of each slice of avocado toast.
- Top the Avocado Toast with Sunny Side Eggs with a generous sprinkle of fine sea salt and freshly ground black pepper (to taste).
